Three Ingredient Breakfast Bites

This particular dish was the first breakfast my husband ever made for me. I thought it was so simple, why hadn't I ever done it before?! These breakfast bites are something that taste delicious and are super wholesome, but require minimal effort (my kind of recipe!). These breakfast bites also lend themselves to allow you to get creative and add your own favorite breakfast ingredients. The full recipe is at the bottom of this post.

The three main ingredients that go into these breakfast bites are bacon, spinach, and eggs, along with some salt, pepper, and oregano.


I first start by cutting strips of bacon in half. Then I lay two half slices of bacon into each part of a muffin tin. I use a square one to make it a little more elegant, but you can use whatever round one you have on hand. I then place a few spinach leaves on top of the bacon. You don't want too much spinach piled up or the egg won't have enough room to stay in the muffin tin. After I put the spinach in, I then crack an egg onto each pile of spinach, trying to get the yolk in the center.


At this point you could add any other ingredients you wanted, such as tomatoes, cheese, or sausage, but we just keep it simple with some salt, pepper, and oregano. Then just toss them in the oven, bake, and enjoy!




These are a few tools that I used in the kitchen while making these delicious breakfast bites.






Recipe

  • 12 slices uncooked bacon

  • 12 eggs

  • small bag of baby spinach

  • dried oregano

  • salt and pepper to taste


Directions

  1. Preheat oven to 400 degrees.

  2. Slice bacon in half, and criss-cross two half slices of bacon into each cavity of a muffin pan.

  3. Lay a few spinach leaves on top of the bacon, making sure to not overfill.

  4. Break one egg into each cavity of the muffin pan on top of the spinach, trying to get the yolk in the center.

  5. Optional: Layer more of your favorite breakfast toppings such as crumbled sausage, tomatoes, or cheese.

  6. Season the top of each egg with dried oregano, salt, and pepper.

  7. Bake in the oven for 25 minutes, and enjoy!

  8. Makes 12 breakfast bites.
