The Best Broccoli Casserole

When you think of that one dish that your mom would take to all the potlucks, what do you think of?


For me, that dish is broccoli casserole. I spent the majority of my childhood hating it (ew, broccoli), but now that I'm older and have developed more mature tastebuds, broccoli casserole is one of my favorites, and definitely brings back a little nostalgia.

For this delicious casserole, you only need 5 simple ingredients: butter, crackers, broccoli, cream of mushroom soup, and cheddar cheese.





Start by preheating the oven to 350 degrees. Then bring a quart of water to a boil, and place two heads of chopped broccoli in the boiling water. Boil the broccoli until it's fork tender, then drain it. After I drain the broccoli I like to mash it up a little with a fork, just so I don't get big chunks of broccoli in the casserole. Then set the broccoli aside until the casserole is ready to put together.











In the meantime, melt half a stick of butter in the bottom of a casserole dish (the dish I used was 1.5 quarts). I usually just melt the butter by putting the casserole dish in the preheating oven for a few minutes. It won't take long for it to melt. Once the butter is melted, crush up about a half a sleeve of your favorite crackers and mix that with the melted butter at the bottom of the casserole dish. Then slightly pack the crackers down to form an even layer.






In a bowl, mix together the cream of mushroom soup and cheddar cheese. I shredded my own from some local cheese that I had bought from a nearby farm. You could easily use velveeta cheese, packaged shredded cheese, or any other type of cheddar cheese.


Now it is time to layer the casserole! Lightly pack the broccoli on top of the crackers, creating an even layer. Then pour the cream of mushroom soup and cheese mixture on top of the broccoli. Make sure all the broccoli is covered by the mixture.





Next, place the casserole in the oven and bake it for about 45 minutes, until the cheese is slightly browned and bubbling. This size casserole will serve about 4 people.




Recipe

  • 2 heads broccoli

  • 1 cup cheddar cheese

  • 1 can cream of mushroom soup

  • 1/2 stick butter

  • 1/2 sleeve (about 1.5 cups crushed) crackers


  1. Preheat oven to 350 degrees.

  2. Bring a large pot of water to a boil, and place chopped broccoli in the water. Boil until fork tender, then drain. Mash broccoli slightly so there are no big chunks.

  3. Melt butter in the bottom of a 1.5 quart casserole dish. Mix in crushed crackers, light packing them to form an even layer at the bottom of the dish.

  4. In a bowl, mix together cream of mushroom soup and shredded cheddar cheese.

  5. Layer broccoli on top of crackers, then evenly distribute the cream of mushroom soup and cheddar cheese mixture on top of the broccoli.

  6. Bake for about 45 minutes, until cheese is slightly browning, and enjoy!
