How to Make Easy Mini Tacos

I love tacos. I mean, who doesn´t? They´re so versatile, quick, and simply delicious. So I make some version of tacos about once a week. But my favorite way to make tacos is to make them mini. A favorite restaurant that Eric and I go to frequently has mini tacos as one of their appetizers, and I swear we go just to eat them. So wanted to recreate them at home so we didn´t have to make the 45 minute drive for a $15 appetizer. Making mini tacos at home is super easy, quick, and well worth the mess. You will need:

  • large soft tortillas

  • ground beef

  • taco seasoning

  • mini sweet peppers

  • lettuce

  • your choice of shredded cheese







Making the Tacos

First, preheat the oven to 350 degrees. Then start cooking down your ground beef in a nonstick skillet on medium heat. I season lightly with salt and pepper throughout, but not too much since I add taco seasoning later. For some extra flavoring here, you could add chopped onions during this step.


While your ground beef is cooking, get out your tortillas and put them on a cutting board. I sprayed mine slightly with some cooking spray to help them crisp up in the oven. Use a large biscuit cutter (you can use the rim of a glass if you don´t have biscuit cutter) to cut out small circles of taco shell. With the size tortillas I use I can get 4 small tortillas out of one shell. Turn a cupcake pan upside down, and fold your small tortillas in between the cups. Then bake in the over for 10-15 minutes. Keep an eye on them...they burn easily!


While the tacos are in the oven, continue cooking the ground beef until there is no pink. Then add in one packet of taco seasoning. I use the mild, but you can use whatever flavoring you prefer. cover and let simmer, stirring occasionally, until the taco shells are finished cooking.



Next, while the ground beef is simmering and the taco shells are in the oven, start slicing the mini sweet peppers into small rounds. I give them a quick saute of about 3-4 minutes, just to get them soft, but not enough to lose their yummy flavor.



Finally, all you have to do is shred the lettuce, get everything out the oven and off the stove, and your ready to assemble your tacos! Take a taco shell, scoop in a spoonful of taco mixture, and top with lettuce, peppers, and your choice of shredded cheese. The toppings will go a long way because it doesn´t take much to fill these mini tacos. Now you are ready to eat and enjoy!

Recipe:

  • 5 large flour tortillas

  • 1 pound ground beef

  • 1 package taco seasoning

  • 3-5 mini sweet peppers

  • 1 cup shredded lettuce

  • 1 cup shredded cheese


Steps:

  1. Preheat oven to 350 degrees.

  2. In a medium pan, brown ground beef. Season lightly with salt and pepper.

  3. On a cutting board, spray tortilla shells lightly with cooking spray. Then cut out small circles of tortillas using a biscuit cutter. Place folded on an upside down muffin pan and bake for 10-15 minutes, until lightly golden.

  4. Once ground beef is cooked, add in taco seasoning and simmer for 10 minutes.

  5. Cut mini sweet peppers into small rounds and saute for 3-4 minutes.

  6. Shred lettuce.

  7. Take tortillas out of the oven, remove ground beef mixture and peppers from heat, and assemble your tacos. Enjoy!
